These aren't bad!
My main comment would be that they could use a little more depth. For example the Santa , everything is all on one layer and he looks a little flat. You could put his sleeves on the 2nd layer, and his belt on the 2nd layer etc
Another example is the penguin. The shading could be made more subtle and blend in more.

As stated above, Mineplex has stayed on version 1.8 because of the combat mechanics (I think ;D). Even if Mineplex were to switch over to 1.16+ whenever the combat update V2 comes out, I don't think anyone would use it that much if it was implemented. It might be fun for the first couple days, but as time goes on, mist people will switch back over to using Morphs (Wither,Elder Guardian)…
